This is by far one of the easiest recipes that I will ever share. I almost feel guilty for even trying to post it as a recipe…almost. What I love most is how put together you can make this meal look. Introducing grilled shrimp (see I told you it was almost too simple).
Ingredients:
- 1 pound jumbo shrimp
- 1 TBSP cajun seasoning
- 2 cloves garlic, minced
- Salt and pepper, to taste

In a large zipper storage bag, add all ingredients. Shake to evenly distribute and coat all shrimp.

Heat a grill pan or outdoor grill to medium-high heat. Grill shrimp until done, about 2-3 minutes per side.
Serve with a green vegetable and cauliflower mash. Since I feel a little guilty about how simple this “recipe” is, I’m going to throw in the cauliflower mash recipe.
Cauliflower Mash
Ingredients:
- 1 head cauliflower
- 2 cloves garlic
- 1 TBSP ghee

Cut cauliflower into florets. Add to saucepan and cover with water. Add whole cloves of garlic. Heat on stove over high heat, until it comes to a boil. Cover and reduce heat to medium. Cook for 8 minutes.

Drain cauliflower. Add cauliflower and garlic cloves to food processor or use an immersion blender. Add ghee and blend until smooth.

Add salt and pepper to taste.
Note: If you want a sturdier mash, after you drain the cauliflower transfer it to a clean dish towel and wring out moisture.
